Guide for 2cm thick sirloin, rump or ribeye steak cooked with moderate heat for the following times:

Rare = 2 ½ minutes per side A rare steak should be evenly browned on the outside and very pink on the inside. To touch, it should contract slightly.

Medium/Rare = 3-3 ½ minutes per side A medium/Rare steak should be firm to touch but soft in the centre. Most of the middle should be pink with a hint of delicious red running through the middle.

Medium = 4 minutes per side A medium steak should be slightly pink on the inside and is resistant to touch. The mouth watering juices will seep on the sealed surface of the steak.

Well done = 6 minutes per side This steak is cooked right though to the middle and feels firm to touch.
