What are Special reserve Chickens?

Label Anglais Chickens are raised by S.J. Frederick & Sons to traditional methods which they (and others) believe lead to the finest tasting and quality chicken money can buy. Label Anglais Chickens were developed from two old breeds, the Cornish Red and the White Rock. Cooking Suggestions

Try putting half a cup of salted and peppered water inside the chicken cavity while it cooks. The steam keeps the meat moist and the seasoning adds flavour.

Leave your chicken to rest, whilst lightly wrapped in foil, for as long as possible. This resting time will allow the chicken to reabsorb the juices it has lost whilst cooking and it will also let the muscles relax.
